Fats, Oil and Grease

In December 2004, the Santa Ana City Council adopted Ordinance NS 26-70, adding fats, oils and grease (FOG) control regulations to food service establishments. The purpose of this new regulation is to reduce the amount of FOG from entering the City's sewer system. As FOG hardens in sewer lateral lines and sewer mains, it prevents the sewage stream from passing through and ultimately, causes raw sewage to back up into your business or home. This new ordinance now requires that all food service establishments install grease trap interceptors and/or implement best management practices to prevent fats, oils and grease from entering the sewer system.
